Shawn Sallesi did his apprenticeship at the renound Beppis Restaurant in East Sydney for four years. As soon as he completed his apprenticeship he started a catering business at the Macquire Hotel Darlinghurst, it was a huge sucess and gave him the confidence to go out and set up a restaurant. On 24th November 1997 Shawn and his wife Anna opened "Sallesis Restaurant" in Gymea south of Sydney.
Sallesis was very busy and successful and was regularly booked out for the weekends, 3 weeks in advance. After 7 years it was time for Anna and Shawn to start a family and they sold Sallesis and The Food Gallery a small cafe they had set up next door. Thus after a break from the restaurant scene Shawn has opened Margaritas named after his daughter.
